HRC 58 refers to the hardness of the blade on the Rockwell scale. It indicates that the steel is hard enough to stay sharp for a long time, while still being easy to maintain and resharpen when needed.
Each Matakumi knife is hand-sharpened at an 15° angle per side. This angle offers the perfect balance between sharpness and durability for everyday use.
We recommend washing the knife by hand with mild soap and drying it immediately after use. Avoid the dishwasher to preserve the sharpness of the blade and the natural beauty of the handle.
